Chef Aaron McCloud
Our chef began his career as in hospitality with the most unlikely of roles. In his early teens, he began entertaining in restaurants as a professional violinist. Having a lifelong love of food and hospitality, Aaron decided to trade in his bow for a Chef's knife-- and the journey began… McCloud has worked in several of the finest restaurants, hotels, and catering venues in VA, Michigan, DC, NYC, Vermont, Massachusetts, and Florida. While in Florida, Aaron was privileged to work as Saucier at the world renowned, AAA-Five Diamond Award winning Victoria and Albert's. He later relocated to open the critically acclaimed Aster as Chef de Cuisine. Aster earned top marks during Aaron's tenure and was regarded as one of the finest restaurants in the DC area. Next, McCloud began building the multi-concept, Vintage Restaurant Group which enjoyed great success during his years at the helm. After a season as Executive Chef at The Inn at Perry Cabin on Maryland's eastern shore, Chef returned to DC to lead the kitchen at Cedar. After many years of experience dedicated to the most sustainable and seasonal cuisine, a perfect fit for Cedar's "rural flavors meets urban style" approach. As the chef of Cedar, he brings the utmost dedication, passion and experience with fine cuisine and genuine hospitality. Aaron's style is very seasonally focused, a bit whimsical, stylish, and greatly American. He will stop at nothing to provide a world class and memorable experience for his guests.
